Creamy Lemon & Spinach Tortellini

This Creamy Lemon & Spinach Tortellini is the perfect summer pasta! It is light, refreshing, and just so delicious! This was my first time trying out this pasta and it did not disappoint. It is a super quick meal, so it is perfect for a week day dinner. This recipe did not call for any meat, but you can for sure add whatever you would like to it! We used our favorite Aldi Frozen Chicken. I usually am not into using frozen meat, however, this stuff is the best and adds so much flavor to recipes. Just throw it in the air fryer and it gets nice crispy! We also accidently bought ravioli, but it all still worked out, so use what your prefer. Here is what you need!

Steps:

Bring a large pot of salted water to a boil, add your tortellini and cook.

  • In a large pan, add your butter and olive oil and set to low/medium heat.

  • Add your fresh garlic, pepper, and red pepper flakes. Saute` for about a minute.

  • Add in the heavy whipping cream and bring it to a simmer for about 3 minutes.

  • Once the sauce is reduced, add the juice of your lemon, lemon zest, and parmesan cheese. Mix until melted and the sauce thickens.

  • Add in your spinach, cooked tortellinii, and pasta water. Add any more seasoning you might need!

  • Once combined, top with fresh cracked pepper, lemon zest, parmesan cheese, and basil. ENJOY!
