Blueberry Lemon Loaf
If you are looking for the perfect summer dessert, look no further! This Blueberry Lemon Loaf is the perfect amount of sweetness and tanginess. It is so refreshing and perfect on a hot summer day! I have been on a pretty big lemon kick lately, so this for sure has become a staple to make and it is so easy. Here is what you need!
Steps:
Pre-heat your oven to 350 degrees. Grab a loaf pan and spray with Pam or line with parchment paper.
In a small bowl, mix the blueberries with 2 tablespoons of flour until the blueberries are coated. Set aside.
In a medium bowl, mix together the flour, baking powder, and salt. Set aside.
In your Kitchen Aid mixer bowl or a large bowl, cream together the butter and sugar until light and fluffy. Let it mix for about 4-5 minutes.
Beat in the eggs, lemon juice, lemon zest, and lemon extract. Gradually add the dry mixture in. Slowly add the milk in and continue to stir.
Once the batter comes together, slowly fold in the blueberries.
Pour the batter into the prepared loaf pan and bake for about 55-60 minutes. The top of the loaf will be slightly cracked, raised, and golden brown.
Let the loaf cool and enjoy!
