Strawberry Pretzel Icebox Pie

This Strawberry Pretzel Icebox Pie is the perfect dessert for this Fourth of July weekend! It is a southern staple (if you are from the South, you have probably had this is the form of a pie or in a casserole dish). The mixture of sweet and salty is so delicious! If you are attending a Fourth of July party or cooking out at home this weekend, you need to try this recipe out! Here is what you need.

Steps:

  1. Pre-heat your oven to 350 degrees.

  2. Using a food processor or chopper, finely crush 2 cups of pretzel sticks. I left mine a little thicker to add more crunchiness, but if you want a finer crust, crush to your desire! Place the crushed pretzels in a separate mixing bowl.

  3. Combine to the pretzels 3/4 cup melted butter and 1/4 cup of light brown sugar. Stir until fully combined.

  4. Press the pretzel mixture into a pie dish. Firmly press down to form around the edges. Bake at 350 degrees for about 12 minutes. Set aside to cool.

  5. In your stand mixer bowl, combine the condensed milk, cream cheese, and strawberry gelatin. Mix well.

  6. In a food processor, add the freshly cut strawberries until smooth. Add to your filling and combine well. Set aside.

  7. In another stand mixing bowl, add 3/4 cup of heavy whipping cream. Beat until fluffy.

  8. Combine your filling and fluffy heavy whipping cream. Mix until fully combined.

  9. Pour the filling into your pretzel crust. Place the pie in the freezer for about 8-12 hours.

  10. In your stand mixer bowl, make your homemade whip cream (it is so easy and I will never eat anything else besides this for whip cream). Add 1 & 1/4 cups of heavy whipping cream and 1/3 cup of sugar. Mix until light and fluffy!

  11. When ready to serve, add the whip cream to the top of the pie. Let thaw for about 15 minutes before eating and ENJOY!
